Vegetable Black Bean Soup

  • 1 medium onion, diced (1 1/2 cup)
  • 2 carrots, diced (1 1/2 cup)
  • 7 cups cooked black beans
  • 1 quart vegetable broth
  • 1 1/2 cup celery, diced
  • 1 red pepper, diced
  • 5 small tomatoes (3 cups)
  • 3 cloves garlic, pressed
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chili powder
  • ½ teaspoon cumin
  • 1 teaspoon of salt
  • soy sour cream (optional)
  1. In a large pot, sauté onions and carrots in a few tablespoons of vegetable broth.
  2. Add 5 cups of beans and the rest of the broth.
  3. Use an immersion blender to puree to desired consistency (or you can use a food processor).
  4. Add celery, red peppers, garlic, apple cider vinegar, chili powder, cumin, and salt.
  5. Bring to a boil, reduce heat, cover, and simmer on low for about an hour.
  6. Garnished with soy sour cream, if desired.

I assume the 3 cups of tomatoes are added with celery, red pepper, garlic, apple cider vinegar, chili powder, cumin, and salt.As step 4 says.i’m in the mikddle of making this now. got the homemade vegetable stock brewing as i type this up.I be up till 11 pm . But it be well worth the effort, This recipe has my mouth watering, Too bad i have to settle for something else to eat for dinner, Its 9 pm and i have not eaten yet.Looking forward to tasting this dish. Looks soo great i can taste it when i first saw this recipe on line.I never add anything to a post, I hope i dont get extra spam e-mail from doing so, They say it will not be published, Hope i;m not sorry, because i will be mad at this website post, But the soup will make up for that, Happy cooking and God Bless you.

  4. That looks delicious. Just found you while browsing for castile soap recipes. I am going to try out this recipe, for sure. Have you, by any chance, ever been to Athens, GA? THey have a delicious vegetarian/vegan restaurant called The Grit and this looks very similar to their version. Thanks for the great recipes. :)
